Rambling Update: Baking and Boundaries

I made blueberry muffins today. They were made with sourdough discard and cornmeal based on the Blueberry Sourdough Muffin recipe from King Arthur Flour. These were sooooooooo much better than the blueberry muffins I made last week. I will definitely try this recipe again.

Blueberry Sourdough Muffins

The last muffins were blueberry banana muffins. They were too sticky and almost soggy due to the blueberries bursting despite being fully baked. That recipe I found here. I will not be making these again. 

It has been nice reviving my sourdough starter. I am forced to bake more often since I hate throwing the discard away. It makes so many yummy things! Plus, baking is a stress relief for me. More baking = less stress.

Overall, today was a good day. I distanced myself from work and spent time focusing on my daughter. She got a new toy today, the LeapFrog Laptop, which should help her learn her letters while also giving her her own laptop to play with while mommy is on her laptop. That’s the hope at least. 

I also managed to get laundry done, turn leftovers into frozen burritos for the future, and apply for another part-time job. My husband took our dog to the vet for his senior check-up and we made stuffed bell peppers for dinner. 

Finally growing grass! Look at all that green!!

The rain poured all day. We finally have grass growing in the front lawn thanks to the rain. And the grass in the backyard is turning green again after going brown thanks to all the hot, sunny weather we had for the last several months. 

I am practicing boundaries with my current job. It was supposed to be a 15-20 hour/week thing but it turned into a 30-50 hour/week thing. Taking more time off to spend with my daughter is a must. I am forcing myself to take days off instead of always being available. We will see if this helps with my anxiety. The crisis I was facing last week cannot be a common occurrence for me anymore. 

I also hope to spend more time with my art. It’s not something I’ve made time for lately and I miss it. This last weekend I got a taste for airbrushing acrylics so you may see my attempts at creating things using an airbrush (if I do end up purchasing my own – that’s still up for debate). You will also see me branch out and paint more miniatures.

In the meantime, I have reactivated my old Instagram account. You can see more regular updates on my life over there if you are interested. Mostly it will be pictures of my journal and perhaps the things I bake. We will see.
